Mi Cook Book, Tu Cook Book

These are the recipes I make regularly because they’re my friends’ and family’s favorites. These three desserts are so rich and delicious. They are easy to switch up and personalize like my Mom does, she likes to add peanut butter to all of these recipes. This is my own mini cook-book that you can make your own!

The Best Brown Butter Cookies

This is Kroll’s Korner’s: “Brown Butter Chocolate Chunk Cookies” which is just the best. You don’t even want to tweak it at all because of how amazing they are. Usually I can only have so much of a rich cookie, but there’s something so comforting about these that keeps me making them. They’re nothing like s’mores but these cookies with a glass of milk and a fireplace would make the perfect moment. Like the feeling of a warm hug as a cookie!

Instructions:

Preheat the oven to 350°F.

Brown the butter by putting the butter on medium heat and stirring it constantly to make sure it’s melted evenly. Once it smells like brown sugar and it’s amber/brown it’s done.

Let the butter cool off before mixing in the granulated and brown sugar.

Mix in the eggs, milk, and vanilla.

Fold in the dry ingredients and most of the chocolate chunks until just combined.

Dunk the cookie ball into the remaining chocolate chunks.

Bake for 10-11 minutes!

You.

Will.

Love.

Them.

‎My Favorite Chocolate Cookies

These are Pinch Of Yum’s: “The Very Best Chocolate Cookies” —with a few of my own twists. I’ll just tell you straight up. They are rich, fudgy, chocolate bombs and perfectly balanced out with a glass of milk. If you like fudge Pop-Tarts, this recipe is for you. This is the kind of recipe you can mess around with. In the winter I’ve swapped the sugar coating for crushed candy canes. My mom swears by adding a bit of peanut butter. And if the chocolate is too much, you don’t even need to add chocolate chips and they’ll still turn out amazing. I’ve made this recipe so many times, switching up so many ingredients and every time they come out so delicious.

Instructions:

Preheat the oven to 350°F.

In the bowl of a stand mixer, cream butter and sugar until fluffy and light.

Add egg and vanilla, mixing gently until just combined.

In another bowl, mix together flour, cocoa powder, espresso powder, baking soda, baking powder, and salt. Then slowly mix those dry ingredients into the wet ingredients till it’s a soft dough.

Form into balls(around ¼ cup per cookie) then press about 10(or more) chocolate chips into the center and fold the dough around them like a dumpling. Roll each of the balls in a bowl of the extra sugar. I’ve also sprinkled on powdered sugar before which was fantastic.

Put them in the oven for 12 minutes and let them sit for at least 5 minutes so they can crisp up on the edges. I recommend refrigerating them a little to make them stronger because they can be a tad crumbly.

The Perfect Fudge Brownies

This is the Baker by Nature: “The Best Fudge Brownies” recipe! These are the classic brownies people think of when they imagine that chocolaty, fudgy, rich, sweet treat. They are another recipe you can tweak in any which way. I’ve turned them into s’mores brownies, I’ve added in cookie dough to make the most perfect brookies, and my mom loves a dash of peanut butter. No matter what you do, these brownies are a hit.

Preheat the oven to 350°F.

Sift together the flour, baking powder, salt, cocoa powder, and espresso powder.

Over medium heat, mix together the butter, oil,  and ⅓ of the sugar. Stir it constantly and take it off the heat once the butter is melted.

In another bowl mix the eggs, vanilla, and remaining sugar.

Slowly mix the egg and butter mixture together.

Mix in the dry ingredients and chocolate chips until just combined. Make sure you don’t overmix the batter because then your brownies will turn out cakey.

Transfer the batter into a 9×9 pan and bake for 30 minutes.

Of course there are plenty more delish recipes but if you love a rich chocolaty treat, these are the only three you’ll need. They are the perfect thing to bring to a book club or to share at a movie night with your friends. Without fail these will be a crowd pleaser. Pro-tip: Pair them with a scoop of vanilla ice cream and you get yourself a one way ticket to flavor town.
